The pasilla chile (/ˌpɑːˈsiːjə/ pah-SEE-yuh) or chile negro is the dried form of the chilaca chili pepper, a long and narrow member of species Named for its dark, wrinkled skin (literally "little raisin"), it is a mild to hot, rich-flavored chile.
The fresh narrow chilaca can measure up to 9 inches (230 mm) long and often has a twisted shape, which is seldom apparent after drying. It turns from dark green to dark brown when fully mature.
Pasilla are used especially in sauces. They are often combined with fruits and are excellent served with duck, seafood, lamb, mushrooms, garlic, fennel, honey, or oregano.

Pasilla Beef Filets with Nopales / Tiras de Bistec con Nopales en Salsa Pasilla
4 sliced nopales
6 Pasilla Chilies
1 sliced red onion small
4 beef steaks
In a pot with enough water and salt, cook the nopales until they are cooked; drain and set a side.
Separately, soak the chiles in 3 cups of water, when they are soft, blend them with the water until a homogeneous mixture is obtained; strain and set aside.
Heat oil in a saucepan and sauté the onions and the steaks, when they are cooked pour the
liquefied mixture, season and cook until it boils. Add the nopales and cook for 5 minutes.
